Coming from a family that has been winemaking for more than five centuries, Daniel Chotard was teacher before coming back into viniculture.
As an accordion and guitar player, he is a founder of the festival "Jazz aux Caves", so he knows the tempo of Sauvignon. His vineyards are situated on fine sediment soils resulting in rich wines that still allow for the minerals to show through.
With the rosé he changes tune, blending well with the summer diet due to its beautiful freshness and light acidity, just right with a squid salad.
The third tone of the estate, the red, will accompany beef with its various degrees of age. In its cherry-flavoured youth, it enjoys the rhythm of an oxtail with Pinot Noir. A few years older and, with its complex contrasts, it would be suited for a cottage pie made with beef cheek.
